A Banca da Sardinha — the sardine stall — takes its name from the market tradition that sits at the heart of the Portuguese conservas world. Each tin is made from Atlantic sardines caught artisanally, selected individually by hand, and steamed using the traditional pre-cooked method before being packed in olive oil. The result is a firm, meaty sardine with a clean texture that holds together rather than breaking apart.

What makes this tin distinct is the truffle. The amount is precise and deliberate — enough to introduce an earthy, aromatic depth without overwhelming the fish. The truffle note is subtle on opening and becomes more present as the oil warms. It pairs with sardine in the same way it pairs with egg or pasta: quietly, in the background, making everything around it taste more considered.

Eat on good sourdough toast with the oil drizzled over the top — this is where the truffle comes through most clearly. Equally good straight from the tin with bread and a glass of crisp white wine. Not a tin for cooking through a sauce; the truffle is too subtle to survive heat.
