Anchovies

The anchovy is the most intensely flavoured fish in the tin — and in the right hands, transformative. Yurrita and Olasagasti from the Cantabrian coast, Açor from Portugal, Plymouth Anchovies from British waters. Eat straight, layer on bread, or dissolve into a sauce.
