What is conservas?

Conservas is the Portuguese and Spanish word for tinned fish — but it describes something more specific than the English term suggests. It refers to a centuries-old tradition of preserving fish in tins using artisanal methods: fish caught and processed the same day, packed in good olive oil or butter, and sealed for long shelf life without sacrificing quality. A properly made conserva is a serious food product, treated as such in Portugal and Spain the way wine or cured meat is treated elsewhere. Is tinned fish healthy?

Yes — and by a considerable margin. Tinned sardines, mackerel, and anchovies are among the richest dietary sources of omega-3 fatty acids available, delivering between one and two grams of combined EPA and DHA per 100g serving. They are also an excellent source of high-quality protein, vitamin D, vitamin B12, and selenium — nutrients a significant proportion of UK adults are deficient in. The tinning process preserves nutritional content well; a sardine tinned within hours of catch is often more nutritious than a fresh fillet that has spent days in transit. How long does tinned fish last?

Unopened, most tinned fish will last three to five years from the date of production — and often considerably longer. Premium conservas in olive oil from Portuguese and Spanish producers are known to improve with age, the fish continuing to cure slowly in the oil for years after tinning. Once opened, transfer the contents and oil to a non-metallic covered container and refrigerate. Eat within one to two days. Do I need to cook tinned fish before eating?

No. Tinned fish is fully cooked during the tinning process and is safe to eat directly from the tin. The vast majority of premium conservas are eaten cold or at room temperature — on toast, in a salad, or straight from the tin with good bread. Some preparations warm the fish gently through a sauce or pasta dish, but this is finishing rather than cooking.

Is tinned fish sustainable?

What is ventresca?

Ventresca is the belly cut of the tuna — the richest, most marbled section of the fish, and the most prized cut in the conservas tradition. It is noticeably richer and softer in texture than standard tuna fillet, and is best eaten as it is rather than cooked into a sauce. How long does delivery take?

All orders are dispatched within one business day. Standard UK delivery takes two to three working days from dispatch. Once your order is on its way you will receive a confirmation email with tracking details.

How much does delivery cost?

Delivery is £3.95 on orders under £25. Orders of £25 and over qualify for free shipping.

What if something arrives damaged?

Tinned fish is robust but occasionally a tin can be dented in transit. If anything arrives in a condition you are not happy with, contact us at tinnedfishworld@gmail.com with a photo and we will resolve it promptly.
