Whole Atlantic sardines, fished artisanally and prepared by hand — individually selected, fresh-steamed using the traditional pre-cooked method, then packed in olive oil with a measured addition of oregano.
The oregano is present but restrained. It lifts the oil rather than defining the tin, adding a dry, herbal note that works with the richness of the sardine rather than competing with it. The fish is firm and meaty — this is a tin built around the quality of what's inside it, not the seasoning.
Eat on sourdough toast with a slice of tomato and a drizzle of the oil. Fold through warm white beans with garlic and lemon. Or serve straight from the tin alongside bread and good olives.
