Real baby eels — angulas — are one of the most prized and expensive foods in Spain, fished almost to scarcity from Atlantic rivers. Gulas are the answer: surimi shaped to replicate them, seasoned with garlic-infused sunflower oil and cayenne. Not a substitute born of compromise — it became its own classic. Every tapas bar in Spain serves them.
The surimi base is white fish, coloured with squid ink and formed into thin, eel-like strands. The garlic and cayenne do the heavy lifting on flavour: warm, aromatic, with a clean heat at the end. The texture is tender and slightly silky — nothing like fresh fish, which is not the point.
Eat straight from the tin at room temperature. Or heat gently in a pan with a little extra olive oil and a fresh clove of garlic, and serve on toast with a cold beer — the classic move. Fold through scrambled eggs. Toss through warm linguine with a handful of parsley.
