Razor clams — navajas in Spanish — are among the most prized shellfish on the Galician coast, and among the most painstaking to prepare. Found buried in the sandy beaches of the Rías, they are dug out by hand, held in seawater until purged of sand, cooked, and packed in brine. Nothing added.
The flavour is clean, sweet and intensely oceanic — more delicate than cockles, with a firm, slightly chewy texture that holds its shape well. The brine carries the sea with it; don't discard it.
Eat straight from the tin with a squeeze of lemon — the classic move, and still the best one. Warm briefly in a pan with olive oil and a sliced clove of garlic. Lay over a simple salad of cucumber and herbs. Or serve cold on a board alongside other shellfish and let the tin make its own case.
