Galicia produces some of the finest shellfish in the world. The Atlantic Rías — the deep coastal inlets that cut into the northwest corner of Spain — are cold, clean and mineral-rich, and the cockles that grow there reflect all of it.

Portomar's berberechos are harvested from those waters, briefly poached and packed al natural with nothing but water and salt. No oil, no aromatics — just the cockle as it is. The flavour is clean and briny with a subtle sweetness; the texture tender but with enough bite to feel substantial. The 60-70 calibre means smaller, more refined pieces — more delicate on the plate than the larger grades.

Open the tin and eat them straight with a squeeze of lemon and a cold glass of Albariño. Spoon onto blinis with a little crème fraîche. Add at the last moment to a simple white wine pasta, without heat, so they stay tender.
