Nuri has been making tins in Matosinhos since 1920. The sardines are bought fresh at the fish market first thing in the morning and canned the same day — 37 distinct steps from catch to sealed tin, every one done by hand.
This is the spiced tomato version: the same whole Atlantic sardines, packed in a tomato sauce built around cloves, black pepper, bay and chilli, with carrot and cucumber adding body. The heat is measured and builds steadily — enough to give the tin real character without overpowering the fish. The sauce is the difference between this and the classic tomato; it's a bolder, more complex tin that earns its place alongside it rather than replacing it.
Serve on thick toast with a squeeze of lemon. Stir through pasta with a handful of capers. Or eat straight from the tin — it holds its own without any help.
