Nuri has been making tins in Matosinhos since 1920. The fish is bought fresh at the market first thing in the morning and canned the same day — 37 distinct steps from catch to sealed tin, every one done by hand.
This is the spiced version of the mackerel: the same bold, oily Atlantic fish in olive oil, with chilli, cloves, black pepper, bay and a base of cucumber and carrot built into the tin. The spice adds heat that suits mackerel particularly well — it's a rich, assertive fish, and the warmth of the chilli and cloves cuts through rather than competes. A more complex tin than the classic, and one that stands on its own.
Serve on thick toast with a little crème fraîche to temper the heat. Stir through pasta with capers and a squeeze of lemon. Or eat straight from the tin — it needs no embellishment.
