Nuri has been making tins in Matosinhos since 1920. The sardines are bought fresh at the fish market first thing in the morning and canned the same day — 37 distinct steps from catch to sealed tin, every one done by hand. The paper-wrapped packaging is famous. The fish inside is the reason.
This is the tomato sauce version: whole Atlantic sardines, packed in a slow-cooked tomato sauce with cloves, pepper and a splash of olive oil. The sauce is clean and well-balanced — it deepens the fish without masking it, adding a quiet sweetness and acidity that makes this one of the most versatile tins in the range.
Mash onto thick toast. Stir through pasta with a handful of basil. Serve straight from the tin with good bread and nothing else. A tin that rewards simplicity.
