Ferrigno has been canning fish on the French Mediterranean coast for over seventy years, packing under the La Bonne Mer label from their cannery at Port Saint Louis du Rhône. This tin is something a little different from standard mackerel — and better.

Known in France as lisettes, small Atlantic mackerel are prized precisely because of their size. Smaller fish mean a more delicate texture, a milder flavour, and a tenderness that full-grown mackerel can't match. Wild caught, steamed on racks and carefully handled by hand, packed in extra virgin olive oil with nothing else added. No central bones. No fuss.

The result is a clean, well-balanced tin — mackerel's characteristic richness without any heaviness, the olive oil carrying the flavour simply and well. Salt content is notably low at 0.21g per 100g, making this one of the most naturally flavoured tins in the range.

Serve as part of an aperitif spread with cornichons and good bread. Flake over a simple green salad with a lemon dressing. Toss through pasta with capers and a handful of fresh herbs. Or eat straight from the tin — the most straightforward way, and hard to improve on.
