Ferrigno has been canning fish on the French Mediterranean coast for over seventy years, packing under the La Bonne Mer label from their cannery at Port Saint Louis du Rhône. This is their Fishermen's tin — Sardines du Pêcheur — built on the flavours French fishermen have been eating on the coast for generations.
Wild Atlantic sardines, hand-prepared and steam-cooked on grids in the Ferrigno workshop — never fried — then packed in extra virgin olive oil with lemon, garlic and parsley. The combination is bright, aromatic and clean. The lemon lifts the oil; the garlic adds depth without heat; the parsley keeps it fresh. A tin that gets better with time, the flavours developing and deepening the longer it sits.
Eat straight from the tin with bread. Toss through pasta with a handful of capers and a little extra lemon. Spoon over grilled vegetables or a simple potato salad. Or open it as part of a tapas spread — the most natural thing in the world on the French Riviera, and just as good anywhere else.
