Ferrigno has been canning fish on the French Mediterranean coast for over seventy years, packing under the La Bonne Mer label from their cannery at Port Saint Louis du Rhône. This tin takes its lead from the cooking of Nice — the city that gave the world salade Niçoise and a culinary tradition built on olive oil, vegetables and the full flavour of southern France.
Atlantic sardines in extra virgin olive oil with sweet peppers, onion, garlic and a measured addition of chilli. It's a fuller, more complex tin than the plain olive oil version — the vegetables add body and sweetness, the garlic runs through the oil, and the chilli adds a quiet warmth at the finish. Bold Mediterranean flavour, no heat required.
Eat straight from the tin with crusty bread. Toss through pasta with a handful of capers and black olives — the natural next step for a Niçoise-style preparation. Spoon over a simple green salad with a squeeze of lemon. Or open as part of a board alongside other tins and let the colour and warmth of it do the talking.
