Ferrigno has been canning fish on the French Mediterranean coast for over seventy years, packing under the La Bonne Mer label from their cannery at Port Saint Louis du Rhône. This is one of the most distinctive tins in the range.
Tapenade — the Provençal paste of black olives, capers, anchovy and olive oil — is one of the defining preparations of southern French cooking. Ferrigno have packed whole Atlantic sardines directly in it, so the fish absorbs the full weight of those flavours throughout the tin. It’s deeply savoury and intensely Mediterranean: the olives give bitterness and depth, the capers sharpness, the anchovy an umami backbone that amplifies everything around it.
The result is a tin that rewards eating straight from the can as much as it does cooking with. Spread thickly on toasted baguette or dark bread — the most natural move. Fold through warm pasta with a handful of parsley and a drizzle of olive oil. Open alongside other tins on a board and watch it disappear first.
