Ferrigno has been canning fish on the French Mediterranean coast, between Marseille and Sète, for over seventy years. This tin is the simplest in the butter range — and in many ways the most purely Provençal.
Thyme from Provence has a character that regular thyme doesn't — drier, more intense, with a warmth that comes from growing in the rocky, sun-baked hillsides of southern France. Packed into butter with whole Atlantic sardines, it infuses the tin completely. When heated, that fragrance opens up and fills the pan.
The move is the same as the other butter tins: run under warm water before opening to loosen the butter, tip into a hot pan and heat gently for two minutes. The butter and thyme do the rest. Serve over new potatoes with a little flaky salt. Toss through pasta with a handful of capers and a squeeze of lemon. Or simply with crusty bread and a glass of chilled white wine — the most southern French thing you can do on a weeknight.
