Ferrigno has been canning fish on the French Mediterranean coast, between Marseille and Sète, for over seventy years. This tin takes one of the great French flavour combinations and applies it to the sardine.
Parsley and garlic — persillade, the herb sauce that runs through the cooking of southern France — blended into butter and packed with whole Atlantic sardines. The result is somewhere between a conserva and a ready-to-cook bistro dish. The butter carries the parsley and garlic evenly through the tin; the fish absorbs it as it heats.
This one is designed to be warmed, not eaten cold. Run the tin under warm water for a minute before opening to loosen the butter, tip into a hot pan and heat gently for two minutes. The butter becomes a sauce instantly — aromatic, rich, with the garlic just present enough to know it's there. Serve over steamed potatoes, tossed through linguine, or with crusty bread alongside for a meal that takes less time than it deserves credit for.
