Ferrigno has been canning fish on the French Mediterranean coast, between Marseille and Sète, for over seventy years. This is their classic — Atlantic sardines in extra virgin olive oil, finished with Camargue fleur de sel.

Where the butter tins in the Ferrigno range are designed for the pan, this one is built to be eaten as it comes. The olive oil is clean and well-chosen; the fleur de sel — harvested from the salt flats of the Camargue in southern France — adds a mineral brightness that lifts the whole tin. No heat needed. No preparation required.

The fish is firm and flavourful, the oil worth using. Eat straight from the tin with good bread and a glass of something cold. Layer over a simple tomato salad with a handful of basil. Fold through warm pasta with a squeeze of lemon and a drizzle of the tin's oil. A tin that does exactly what it promises and nothing less.
