Ferrigno has been canning fish on the French Mediterranean coast for over seventy years, packing under the La Bonne Mer label from their cannery at Port Saint Louis du Rhône — in the heart of the Camargue, the vast wetland delta where the Rhône meets the Mediterranean.
This is the most robust tin in the Ferrigno sardine range. Whole Atlantic sardines in sunflower oil with chorizo — the Spanish sausage that has become deeply embedded in southern French cooking, seasoned with sweet paprika, aromatic herbs and spices. The chorizo doesn’t overpower; at 8.5% it adds warmth, smokiness and a savoury depth that gives the sardines an entirely different character from anything in olive oil or butter.
Bold enough to hold its own on a board, versatile enough for the kitchen. Serve on warm crusty bread with a slick of Dijon mustard. Stir through pasta with a handful of cherry tomatoes. Or eat straight from the tin — the smoky oil is worth soaking up with good bread.
