Ferrigno Mussels With Olive Oil, Garlic and Parsley

Ferrigno has been canning fish on the French Mediterranean coast for over seventy years, packing under the La Bonne Mer label from their cannery at Port Saint Louis du Rhône. This is one of the simplest tins in the range — and one of the most rewarding.
Whole mussels in extra virgin olive oil with garlic and parsley. Nothing more added. The garlic is generous at 10% — you’ll find it in every bite — and the parsley keeps the flavour clean and bright. The oil carries both through the tin; don’t discard it.
Eat straight from the tin as part of an aperitif spread with bread and a cold glass of white wine or rosé — the most natural thing in the world on the French Riviera. Warm briefly in a pan with a squeeze of lemon and serve over linguine. Spoon onto grilled bread with a little extra parsley. Or open it at the table and eat slowly, which is the right way to do it.
