Berthe Tuna Fillets with Lemon

Atlantic skipjack tuna fillets from the Matosinhos cannery behind Berthe, preserved in a light lemon sauce. A leaner, lighter tin than the olive oil version — the lemon is forward and zesty, the sauce clean rather than rich, and at 26g of protein per 100g it eats as well as it tastes.

The parsley adds a fresh herbaceous note in the background. A more delicate tin that works particularly well in salads and lighter dishes where you don't want olive oil dominating the dressing.

Good in a salad with olives, on toast with a few capers, or broken into a grain bowl with cucumber and herbs.
